Ingredients

  • 1 (4 or 5 lb.) chicken
  • 16 oz. pkg. spaghetti
  • 1 can stewed tomatoes
  • 1 lb. American cheese
  • 2 green peppers, chopped
  • 1 1/2 c. onions, chopped
  • 1/4 c. Wesson oil
  • 1 medium can mushrooms
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano
  • 1 small jar pimentos, chopped

Method

  • Cook chicken and debone.
  • Cook spaghetti in chicken broth and drain.
  • Saute in oil the chopped onions and chopped peppers.
  • Add mushrooms, stewed tomatoes and seasonings.
  • Simmer 20 minutes.
  • Add chicken pieces (diced).
  • In casserole, layer spaghetti, layer sauce and layer cheese.
  • If casserole seems dry, add broth from where spaghetti was cooked.
  • Bake 45 minutes at 325°.
  • Serves 10.
