Ingredients

  • 1 lb. boneless chicken breast
  • flour for dredging
  • 3/4 c. dry white wine
  • 1/4 lb. butter
  • 1/2 c. chicken broth
  • 5 gloves garlic, chopped
  • juice of 1 whole lemon
  • pepper to taste
  • oil for frying

Method

  • Cut chicken in 1 1/2 to 2-inch pieces and pound lightly between

  • Dredge chicken pieces in flour and

  • hot
  • oil
  • on both sides. Finish all of the chicken
  • pieces
  • and drain oil.
  • Add the remaining ingredients and let it reduce over high heat until it is nicely thickened. Serve with lemon slices and parsley for garnish. Serves 3.
