- 2 large roasting chickens, cooked and cubed
- 4 Tbsp. salad oil
- 4 Tbsp. vinegar
- 4 Tbsp. orange juice
- 1/2 tsp. salt
- 2 1/2 c. rice, cooked
- 3 c. mandarin orange sections
- 3 c. pineapple tidbits
- 3 c. white seedless grapes
- 3 c. diced celery
- 2 c. slivered almonds, toasted
- 1 qt. mayonnaise
Method
- Mix salad oil, vinegar, orange juice and salt.
- Add chicken and marinate overnight.
- Add all the rest of the ingredients and mix well.
- Serves 25.
