Ingredients
- 1 partially baked pie crust
- 1 Tbsp. flour
- 8 oz. cooked chicken, chopped
- 3 eggs
- 1 c. evaporated skim milk
- 1/2 tsp. garlic salt
- 4 oz. shredded low-fat Swiss cheese
- 1/4 c. onion, chopped
- 1/2 c. green peas, cooked until just barely tender
- 1/2 tsp. salt
- 1/8 tsp. pepper
Method
- Toss cheese and onion with flour.
- (Use waxed paper and save a clean-up job.)
- Spread chicken and peas on bottom of crust; sprinkle with cheese-onion mixture.
- Combine and beat eggs, milk, garlic salt and pepper until well mixed (not frothy).
- Pour over other ingredients in pie shell.
- Bake at 350° for 35 to 40 minutes, or until set and top is lightly browned.
- Let stand 10 minutes before serving.
- Serves 6.
