Ingredients

  • 1 partially baked pie crust
  • 1 Tbsp. flour
  • 8 oz. cooked chicken, chopped
  • 3 eggs
  • 1 c. evaporated skim milk
  • 1/2 tsp. garlic salt
  • 4 oz. shredded low-fat Swiss cheese
  • 1/4 c. onion, chopped
  • 1/2 c. green peas, cooked until just barely tender
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Method

  • Toss cheese and onion with flour.
  • (Use waxed paper and save a clean-up job.)
  • Spread chicken and peas on bottom of crust; sprinkle with cheese-onion mixture.
  • Combine and beat eggs, milk, garlic salt and pepper until well mixed (not frothy).
  • Pour over other ingredients in pie shell.
  • Bake at 350° for 35 to 40 minutes, or until set and top is lightly browned.
  • Let stand 10 minutes before serving.
  • Serves 6.
