Ingredients

  • 1 chicken
  • 1 small onion
  • 3 Tbsp. butter
  • 4 tsp. flour
  • 1 can cream of chicken soup
  • 2 c. chicken broth
  • 1 c. frozen mixed vegetables

Method

  • Barely cover chicken with water.
  • With lid on, simmer until tender.
  • Drain the liquid and save for later use.
  • Bone the chicken.
  • Saute one small onion, minced in 3 tablespoons butter, stirring until smooth.
  • Gradually add 2 cups broth.
  • Bring to a boil slowly.
  • Add 1 cup frozen mixed vegetables or any vegetable you prefer.
  • Add 1 can cream of chicken soup (undiluted) and chicken.
  • Pour into pie crust.
  • Bake at 350° for 35 minutes or until golden brown.
