Ingredients
- 1 chicken
- 1 small onion
- 3 Tbsp. butter
- 4 tsp. flour
- 1 can cream of chicken soup
- 2 c. chicken broth
- 1 c. frozen mixed vegetables
Method
- Barely cover chicken with water.
- With lid on, simmer until tender.
- Drain the liquid and save for later use.
- Bone the chicken.
- Saute one small onion, minced in 3 tablespoons butter, stirring until smooth.
- Gradually add 2 cups broth.
- Bring to a boil slowly.
- Add 1 cup frozen mixed vegetables or any vegetable you prefer.
- Add 1 can cream of chicken soup (undiluted) and chicken.
- Pour into pie crust.
- Bake at 350° for 35 minutes or until golden brown.
