Ingredients

  • 2 (10 oz.) pkg. frozen broccoli
  • 2 eggs, beaten
  • 1 can cream of celery soup
  • 1 c. sharp Cheddar cheese, grated
  • 1 c. mayonnaise
  • Ritz crackers, crushed
  • butter

Method

  • Cook broccoli.
  • Combine eggs, soup, cheese and mayonnaise. Fold in broccoli.
  • Pour into a greased casserole.
  • Cover with cracker crumbs and dot with butter.
  • Bake in a 350° oven for about 30 minutes or until top is browned.
  • Makes 6 or 8 servings. Chopped onion or a can of drained, sliced water chestnuts may also be added.
