Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 chicken breasts breaded
  • 3 1/2 ounces mozzarella shredded
  • 1/2 cup prepared pasta sauce
  • 1/4 cup basil leaves
  • 1 ounce Parmesan grated
  • salad Green, to serve

Method

  • Preheat oven to 350°F. Heat oil and butter together in a large frying pan on medium. Cook chicken 2-3 minutes each side, until golden. Drain on paper towels.
  • Transfer chicken to a shallow baking dish. Sprinkle with mozzarella. Spoon tomato sauce over, top with basil and sprinkle with grated Parmesan.
  • Bake, uncovered, for 10-15 minutes, until bubbly and golden. Serve with green salad.
