Ingredients

  • 1 qt. sliced okra
  • 1 stick butter
  • 1 bell pepper
  • 1/2 c. chopped green onions
  • 1 tsp. minced garlic
  • 1/2 tsp. thyme
  • 1 lb. smoked sausage
  • salt, red pepper and black pepper to taste
  • 2 qt. water
  • 2 large onions, chopped
  • 1 (28 oz.) can Ro-Tel tomatoes
  • 1 Tbsp. cooking oil
  • 1/2 tsp. onion powder
  • 1 lb. chicken
  • shrimp

Method

  • Melt butter.
  • Season chicken with salt and red and black pepper.
  • Brown in butter and remove.
  • Brown sausage and remove. Smother sliced okra in oil until brown.
  • Add onions and bell pepper.
  • Simmer until wilted.
  • Add garlic and tomatoes.
  • Simmer 6 minutes.
  • Add water and seasoning and bring to boil, then simmer 5 minutes.
  • Add sliced sausage and chicken.
  • Simmer 45 minutes.
  • Add green onions.
  • Simmer 10 minutes.
  • Serve over rice.
