Ingredients

  • 2 Tbsp. butter
  • 1 Tbsp. vegetable oil
  • 4 chicken breasts
  • 4 slices Mozzarella cheese
  • 1 Tbsp. parsley
  • 1 clove garlic
  • 3 Tbsp. Marsala wine
  • 2/3 c. heavy whipping cream
  • salt and pepper to taste

Method

  • Heat butter and oil in skillet.
  • Add chicken.
  • Cook, uncovered over medium heat for 5 to 6 minutes on each side.
  • Top with cheese; sprinkle with parsley.
  • Cook, covered, for 3 minutes, cheese is semi-melted.
  • Remove chicken.
  • Keep warm.
  • Add garlic to drippings in skillet and saute for 30 seconds.
  • Stir in wine.
  • Continue stirring and scraping up brown bits which cling to bottom.
  • Stir in cream and cook sauce until thickens, about 3 minutes.
  • Add salt and pepper to taste.
  • Pour sauce over chicken.
