- 2 Tbsp. butter
- 1 Tbsp. vegetable oil
- 4 chicken breasts
- 4 slices Mozzarella cheese
- 1 Tbsp. parsley
- 1 clove garlic
- 3 Tbsp. Marsala wine
- 2/3 c. heavy whipping cream
- salt and pepper to taste
Method
- Heat butter and oil in skillet.
- Add chicken.
- Cook, uncovered over medium heat for 5 to 6 minutes on each side.
- Top with cheese; sprinkle with parsley.
- Cook, covered, for 3 minutes, cheese is semi-melted.
- Remove chicken.
- Keep warm.
- Add garlic to drippings in skillet and saute for 30 seconds.
- Stir in wine.
- Continue stirring and scraping up brown bits which cling to bottom.
- Stir in cream and cook sauce until thickens, about 3 minutes.
- Add salt and pepper to taste.
- Pour sauce over chicken.
