Ingredients

  • 300 g plain flour
  • 200 g butter, 150g diced
  • 100 g icing sugar
  • 1 None egg
  • 50 g slivered almonds, toasted
  • 1 kg cooking apples, peeled, cored and thinly sliced
  • 1/2 None lemon, juiced
  • 50 g gingerbread spices
  • 75 g caster sugar
  • 50 g sultanas
  • 1-2 tbsp icing sugar for dusting

Method

  • Toss the apple slices in lemon juice and set aside. Mix the flour, 2/3 cup diced butter, 2/3 cup powdered sugar, the egg, and 1-2 tbsp water to form a smooth dough. Wrap dough in plastic wrap and chill for 45 mins.
  • Preheat the oven to 350°F. Grease a 9 1/2 inch pie dish. Melt the remaining butter. Set aside 1/3 of the dough then roll out the remainder into a circle and line the pie dish with the dough, pressing up the side of the dish a little over 2 inches.
  • Mix together the apples, spices, sugar, raisins, melted butter and almonds and place in the pie dish. Roll out remaining dough into a circle for the top crust and place over the filling. Press the edges together and cut a small hole in the middle. Bake for 45 mins. Remove from the pie dish and place on a wire rack to cool. Dust with powdered sugar to serve.
