Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped finely
  • 2 garlic cloves, minced
  • 28 ounces chicken broth
  • 2 cups orzo pasta
  • 34 cup parmesan cheese
  • salt and pepper
  • 2 tablespoons parsley, chopped

Method

  • Saute onion in olive oil 3-4 min, add garlic and saute another minute or so until onion is soft and begining to turn golden.
  • Add broth and bring to a boil, stir in orzo, reduce to a simmer and cover with lid.
  • Cook while stirring occasionally for approximately 15 min or until liquid is gone and pasta is tender.
  • Remove lid, add cheese, parsley, and salt and pepper to taste.
