Ingredients
- 4 boneless chicken breasts
- 12 Tbsp. butter
- 1/2 tsp. lemon juice
- 1 Tbsp. chives
- 1 tsp. tarragon
- salt and pepper
- oil
- flour
- 2 eggs
- bread crumbs
Method
- Refrigerate butter, juice, chives, tarragon and salt and pepper mixture for 1 hour.
- Cut breasts in half.
- Put scoop of mixture in center.
- Fasten with toothpick, folding butter in center.
- Roll in water, slightly beaten eggs and flour.
- Roll in bread crumbs. Brown all sides in hot oil.
- Bake at 350° for 30 minutes.
