Ingredients

  • 4 to 6 chicken breasts, skinned
  • 1 carrot, coarsely chopped
  • 1 large onion, coarsely chopped
  • 3/4 c. sliced mushrooms
  • parsley
  • 1 c. white wine
  • 1 c. chicken broth (taste after 1/2 c.)
  • 1 can tomato paste
  • 1 Tbsp. olive oil
  • red pepper to taste
  • 1 clove garlic

Method

  • Sprinkle red pepper over chicken.
  • Brown chicken in olive oil on both sides.
  • Add onion and carrot.
  • Spread tomato paste on chicken.
  • Add wine and broth.
  • Simmer for 15 minutes.
  • Add clove of garlic.
  • Cover and simmer 1 hour.
  • Add mushrooms and cook 10 to 15 minutes.
  • Sprinkle with parsley.
  • Serve over linguini.
