- 4 to 6 chicken breasts, skinned
- 1 carrot, coarsely chopped
- 1 large onion, coarsely chopped
- 3/4 c. sliced mushrooms
- parsley
- 1 c. white wine
- 1 c. chicken broth (taste after 1/2 c.)
- 1 can tomato paste
- 1 Tbsp. olive oil
- red pepper to taste
- 1 clove garlic
Method
- Sprinkle red pepper over chicken.
- Brown chicken in olive oil on both sides.
- Add onion and carrot.
- Spread tomato paste on chicken.
- Add wine and broth.
- Simmer for 15 minutes.
- Add clove of garlic.
- Cover and simmer 1 hour.
- Add mushrooms and cook 10 to 15 minutes.
- Sprinkle with parsley.
- Serve over linguini.
