Ingredients
- 1 fryer, cut up
- 2 c. water
- 1 1/2 tsp. salt
- 1/2 c. green onion, chopped
- 3/4 c. roux
- 1 onion, chopped
- 1 tsp. red pepper
- 1/2 c. parsley, chopped
Method
- In heavy pan, combine chicken, roux, onion, salt, pepper and water.
- Cook, covered, on low heat for about 1 hour or until chicken is tender.
- Add green onions and parsley.
- Cook another 10 minutes.
- Serve with cooked white rice.
