Ingredients

  • 1 whole chicken
  • 2 cups salt
  • good sherry
  • grapes
  • 2 cups clamato
  • 2 cups cooked barley or grits

Method

  • Boil & feather chicken (remove head & save neck for soup or stew)
  • Shred the chicken - force through a food mill and mix w/ sherry , clamato & 2 cups salt, until you can form large mounds. Pile 4 mounds on a baking sheet , sprinkle / grapes and dot tops w/ a cup of barley / grits. bake at 500 in a regular oven, or 1000F in a kiln, for 3 hours or until a hard crust forms, and inside is molten lava hot.
