Ingredients

  • 3 chicken breasts
  • 1 onion, chopped
  • 1 red or green pepper, chopped
  • 1 tsp. cilantro
  • 1 can fat-free refried beans
  • 10 soft tortillas
  • 1 can enchilada sauce
  • 1 can tomato sauce
  • 1 c. shredded Cheddar cheese

Method

  • Cut chicken breasts into bite-size pieces.
  • Saute in 1 tablespoon oil with onion, pepper and cilantro until tender.
  • Add beans.
  • Mix.
  • Mix enchilada and tomato sauces in small bowl. Cover bottom of 13 x 9-inch pan with small amount of sauce. Divide chicken mixture into 10 servings.
  • Place in tortillas and roll.
  • Place rolls in pan; cover with remaining sauce and cheese. Bake 25 to 30 minutes at 350°.
  • Serve with sour cream.
