Ingredients

  • 6 chicken breasts
  • 2 large green peppers, sliced
  • 1 lb. mushrooms, sliced
  • 1 c. Sauterne wine
  • 1 stick oleomargarine

Method

  • Sprinkle chicken breasts with oil and bake in a 13 x 9-inch pan for 45 minutes at 350°; drain.
  • Melt 1 stick oleomargarine and simmer peppers and mushrooms until slightly soft, about 10 minutes.
  • Put mushrooms and peppers on chicken breasts. Pour the margarine and juice over chicken breasts.
  • Pour the Sauterne over all and cover tightly with foil if not serving immediately.
  • Can be reheated at 250° for 30 minutes.
