Ingredients

  • 8 skinned, boned chicken breasts
  • 1 (10 ounce.) pkg. frzn minced broccoli or possibly 1 fresh bunch, cooked
  • Vegetable cooking spray
  • 1 can cream of chicken soup, undiluted
  • 1 can cream of potato soup, undiluted
  • 1 c. skimmed lowfat milk
  • 1 1/2 teaspoon lemon juice
  • 3 tbsp. grated Parmesan cheese

Method

  • Cook chicken in sufficient water to cover for 20 min.
  • Chop; set aside.
  • Cook broccoli, arrange in baking dish coated with cooking spray, top with chicken.
  • Combine soups, lowfat milk and lemon juice; pour over chicken and broccoli.
  • Sprinkle cheese over top.
  • Bake at 350 degrees for 25 min or possibly till thoroughly heated.
  • 8 servings.
