- 2 pkg. broccoli flowerets
- 2 lb. chicken (one 2 to 3 lb. broiler)
- 2 cans cream of chicken soup
- 1 c. mayonnaise
- 1/2 tsp. curry powder
- 1/2 tsp. lemon juice
- 1 Tbsp. butter
- 1/2 c. bread crumbs
- 1/2 c. sharp Cheddar, shredded
Method
- Cook broccoli in salted water.
- Put into a colander and set aside to drain.
- Cook and bone chicken.
- Cut into large bite size pieces.
- Spread broccoli in 9 x 13-inch casserole dish.
- Put chicken over broccoli.
- Mix soup (undiluted), mayonnaise, curry powder and lemon juice.
- Spread over chicken and broccoli.
- Melt butter, toss bread crumbs in it, add cheese and top the casserole. Bake at 350° for 40 minutes or until bubbly.
