Ingredients

  • 2 pkg. broccoli flowerets
  • 2 lb. chicken (one 2 to 3 lb. broiler)
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise
  • 1/2 tsp. curry powder
  • 1/2 tsp. lemon juice
  • 1 Tbsp. butter
  • 1/2 c. bread crumbs
  • 1/2 c. sharp Cheddar, shredded

Method

  • Cook broccoli in salted water.
  • Put into a colander and set aside to drain.
  • Cook and bone chicken.
  • Cut into large bite size pieces.
  • Spread broccoli in 9 x 13-inch casserole dish.
  • Put chicken over broccoli.
  • Mix soup (undiluted), mayonnaise, curry powder and lemon juice.
  • Spread over chicken and broccoli.
  • Melt butter, toss bread crumbs in it, add cheese and top the casserole. Bake at 350° for 40 minutes or until bubbly.
