Ingredients

  • 2 onions, sliced
  • 1 Tbsp. peanut oil
  • 2 c. sliced celery
  • 3/4 lb. sliced mushrooms
  • 1 1/2 c. chicken broth
  • 1 c. bean sprouts, drained
  • 1 c. water chestnuts, sliced
  • 1/2 c. bamboo shoots, sliced
  • 3 c. cooked chicken, bite size
  • 3 Tbsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1/4 c. fried chow mein noodles

Method

  • Saute onions in oil for 10 minutes. Drain. Add celery, mushrooms and chicken broth. Cook 5 minutes over low heat.
  • Stir in bean sprouts, water chestnuts, bamboo shoots and chicken.
  • Make a paste of soy sauce and cornstarch. Stir in. Continue cooking over very low heat until thickened.
  • Sprinkle with fried chow mein noodles or de-Shredded Wheat biscuit, 1/2 c. Rice Krispies or 1/2 c. crushed Life cereal.
  • Serves 6.
