- 2 onions, sliced
- 1 Tbsp. peanut oil
- 2 c. sliced celery
- 3/4 lb. sliced mushrooms
- 1 1/2 c. chicken broth
- 1 c. bean sprouts, drained
- 1 c. water chestnuts, sliced
- 1/2 c. bamboo shoots, sliced
- 3 c. cooked chicken, bite size
- 3 Tbsp. soy sauce
- 1 Tbsp. cornstarch
- 1/4 c. fried chow mein noodles
Method
- Saute onions in oil for 10 minutes. Drain. Add celery, mushrooms and chicken broth. Cook 5 minutes over low heat.
- Stir in bean sprouts, water chestnuts, bamboo shoots and chicken.
- Make a paste of soy sauce and cornstarch. Stir in. Continue cooking over very low heat until thickened.
- Sprinkle with fried chow mein noodles or de-Shredded Wheat biscuit, 1/2 c. Rice Krispies or 1/2 c. crushed Life cereal.
- Serves 6.
