Ingredients

  • 1 Chicken Breast
  • 4 tbs chili powder
  • 1 tbs cumin
  • 1/2 tbs cinnamon
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 Cups Tomatoe Sauce
  • 1 Cup Chicken Broth
  • 1/2 Cup Diced Onions
  • 1 Can White Beans
  • 1 Can Corn
  • 3 Tbs Balsamic Vinagar
  • Olive Oil
  • 1/2 Tsp Cajun Seasoning
  • 1/2 Cup Parlsey
  • 2 Tsp Red Wine Vinegar

Method

  • Rinse beans, corn in strainer, dry thoroughly. Add to bowl, then add balsamic vinegar, red wine vinegar and olive oil, salt and pepper. Cover and put in fridge for at least 1 hour.
  • Olive oil in cast iron skillet. Fry Onions, Chicken, Add all spices. Cook til chicken is tender, then add beans and corn (strained from balsamic, etc) Add Tomato Sauce, then Chicken Broth. Cook for 20 minutes, then taste for re-seasoning. Serve with grated Parmesan cheese.
