Ingredients

  • 2 1/2 c. cooked chicken, cubed (white meat)
  • 2 c. hot cooked rice
  • 1 c. onions, finely chopped
  • 1 c. green peppers, finely chopped
  • 1 small jar pimentos, sliced
  • 1 tsp. garlic salt
  • 1/4 tsp. pepper
  • 1 (10 3/4 oz.) can condensed cream of mushroom soup
  • 1/2 c. Hellmann's mayonnaise
  • 1 Tbsp. chopped parsley
  • 1 c. grated Cheddar cheese
  • mushrooms (add more if you like)

Method

  • Combine chicken, rice, onions, green peppers, pimentos, garlic salt, pepper, soup, mayonnaise and parsley. Toss lightly. Put in greased shallow 2-quart casserole.
  • Sprinkle with cheese. Bake at 350° for 25 to 30 minutes, or until thoroughly heated. Serves 6.
