- 2 1/2 c. cooked chicken, cubed (white meat)
- 2 c. hot cooked rice
- 1 c. onions, finely chopped
- 1 c. green peppers, finely chopped
- 1 small jar pimentos, sliced
- 1 tsp. garlic salt
- 1/4 tsp. pepper
- 1 (10 3/4 oz.) can condensed cream of mushroom soup
- 1/2 c. Hellmann's mayonnaise
- 1 Tbsp. chopped parsley
- 1 c. grated Cheddar cheese
- mushrooms (add more if you like)
Method
- Combine chicken, rice, onions, green peppers, pimentos, garlic salt, pepper, soup, mayonnaise and parsley. Toss lightly. Put in greased shallow 2-quart casserole.
- Sprinkle with cheese. Bake at 350° for 25 to 30 minutes, or until thoroughly heated. Serves 6.
