Ingredients

  • 6 to 8 pieces chicken, thawed and skinned
  • 1 c. rice, uncooked
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can chicken soup
  • 1 1/2 cans water
  • salt and pepper, etc.
  • a few vegetables as desired such as: 1 c. carrot rounds, a few green beans or whatever you wish for added color and nutrition

Method

  • Butter a 9 x 13-inch baking dish and distribute the rice evenly over the bottom.
  • Sprinkle salt and pepper and vegetable pieces as desired.
  • Lay on the chicken.
  • Mix soup and water together.
  • Pour over ingredients in dish.
  • Cover with foil.
  • Bake at 350° until chicken is tender, about 1 1/2 hours.
  • About halfway through the cooking, remove from oven and turn the chicken.
  • About 15 minutes before end of baking, remove foil for browning.
