Ingredients
- 6 to 8 pieces chicken, thawed and skinned
- 1 c. rice, uncooked
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can chicken soup
- 1 1/2 cans water
- salt and pepper, etc.
- a few vegetables as desired such as: 1 c. carrot rounds, a few green beans or whatever you wish for added color and nutrition
Method
- Butter a 9 x 13-inch baking dish and distribute the rice evenly over the bottom.
- Sprinkle salt and pepper and vegetable pieces as desired.
- Lay on the chicken.
- Mix soup and water together.
- Pour over ingredients in dish.
- Cover with foil.
- Bake at 350° until chicken is tender, about 1 1/2 hours.
- About halfway through the cooking, remove from oven and turn the chicken.
- About 15 minutes before end of baking, remove foil for browning.
