Ingredients

  • 6 medium potatoes, sliced
  • 1/2 c. onions, finely chopped
  • 1/2 c. celery, chopped
  • 1 c. sweet relish or salad cutlets
  • 1 1/2 tsp. salt
  • 1 Tbsp. parsley flakes
  • 1 tsp. sugar
  • 2 tsp. vinegar
  • 3/4 c. mayonnaise or salad dressing
  • 4 hard-boiled eggs

Method

  • In a covered pan, cook potatoes until tender.
  • Drain well.
  • In mixing bowl, mash potatoes with old fashioned masher.
  • Sprinkle potatoes with sugar and vinegar.
  • Add celery, onions, sweet relish, salt and parsley flakes to the potatoes.
  • Stir the mixture to combine with potatoes.
  • Add mayonnaise or dressing in potato mixture.
  • Carefully fold in 2 of the boiled eggs after cutting them into medium size pieces.
  • Slice the other 2 eggs into 1/2-inch slices and place over finished prepared salad.
  • Sprinkle paprika over top and serve warm.
  • Serves 6.
