Ingredients
- 6 medium potatoes, sliced
- 1/2 c. onions, finely chopped
- 1/2 c. celery, chopped
- 1 c. sweet relish or salad cutlets
- 1 1/2 tsp. salt
- 1 Tbsp. parsley flakes
- 1 tsp. sugar
- 2 tsp. vinegar
- 3/4 c. mayonnaise or salad dressing
- 4 hard-boiled eggs
Method
- In a covered pan, cook potatoes until tender.
- Drain well.
- In mixing bowl, mash potatoes with old fashioned masher.
- Sprinkle potatoes with sugar and vinegar.
- Add celery, onions, sweet relish, salt and parsley flakes to the potatoes.
- Stir the mixture to combine with potatoes.
- Add mayonnaise or dressing in potato mixture.
- Carefully fold in 2 of the boiled eggs after cutting them into medium size pieces.
- Slice the other 2 eggs into 1/2-inch slices and place over finished prepared salad.
- Sprinkle paprika over top and serve warm.
- Serves 6.
