Ingredients

  • 1 can tomatoes
  • 2 fryers
  • 1 large onion
  • 1 pod garlic
  • 1 pt. okra
  • smoked link sausage
  • seasoning
  • 1 small can mushrooms
  • shrimp (if you like)

Method

  • Cut up chicken, season with salt, garlic salt, Season-All (seasoned salt) and lemon and pepper seasoning.
  • Brown in small amount of Crisco.
  • In another pan, fry sausage.
  • Cut in bite-size pieces.
  • Take chicken off bone and cut in bite-size pieces.
  • In grease from chicken, saute onions, garlic and okra.
  • If more grease is needed, use drippings from sausage.
  • Pour off grease and make a roux with this.
  • Add all ingredients in deep pot and add water. Amount of water is determined by how thick or thin you want this to be.
  • Simmer about 1 hour.
  • Serve over rice.
  • Add gumbo file, if desired.
  • Green salad and garlic French bread make a complete meal.
