Ingredients

  • 1 (15 oz.) can crushed pineapple
  • 1 c. sugar
  • 2 Tbsp. cornstarch
  • 1 large and 1 small cream cheese
  • 3 eggs
  • 3/4 c. milk
  • 1 tsp. vanilla

Method

  • Cook over medium heat crushed pineapple, 1/2 cup sugar and cornstarch until glossy; cool.
  • Cream together cream cheese and 1/2 cup sugar; add eggs 1 at a time.
  • Add milk and vanilla. Spread pineapple mixture in bottom of 10-inch unbaked pie shell. Pour cream cheese mixture over pineapple layer.
  • Bake at 400° for 10 minutes.
  • Reduce heat to 325° and bake for 50 minutes.
