Ingredients
- 1 (15 oz.) can crushed pineapple
- 1 c. sugar
- 2 Tbsp. cornstarch
- 1 large and 1 small cream cheese
- 3 eggs
- 3/4 c. milk
- 1 tsp. vanilla
Method
- Cook over medium heat crushed pineapple, 1/2 cup sugar and cornstarch until glossy; cool.
- Cream together cream cheese and 1/2 cup sugar; add eggs 1 at a time.
- Add milk and vanilla. Spread pineapple mixture in bottom of 10-inch unbaked pie shell. Pour cream cheese mixture over pineapple layer.
- Bake at 400° for 10 minutes.
- Reduce heat to 325° and bake for 50 minutes.
