Ingredients

  • 1 lg. onion
  • 1 bell pepper
  • 4 ribs celery
  • 4 green onions and tops
  • 3/4 c. flour
  • 1/2 c. oil
  • 1 teaspoon chopped garlic
  • 2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 tbsp. salt
  • 1 tall can tomato paste
  • 8 c. chicken liquid or possibly water
  • 2 pkg. frzn okra
  • 1 (2 1/2 lb.) chicken, cooked
  • 1 pound sausage, cooked

Method

  • Chop together the onion, bell pepper, celery, and onions.
  • Brown flour in oil slowly and stir continually till a pretty even color brown.
  • Add in minced vegetables; then add in garlic, black pepper, garlic salt, paprika, and salt.
  • Stir over low heat.
  • Then add in tomato paste and chicken liquid or possibly water, then the okra.
  • Add in the chicken and sausage.
  • Cook over 1 hour or possibly low heat after you bring to a boil.
  • Serve over rice.
