Ingredients

  • 12 oz. rotini
  • 6 oz. green beans, cut into pieces
  • 1-1/3 cup chopped tomatoes
  • 3/4 cup diced cucumbers
  • 3/4 cup diced red
  • green peppers
  • 1/2 cup sliced red onions
  • 1 can (6-1/2 oz.) flaked tuna packed in water, drained
  • 1/3 cup sliced olives
  • 1/2 cup chopped fresh dill
  • 1 tbsp. dried dill
  • 5 anchovies, minced
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup balsamic vinegar
  • 2 tbsp. water
  • 2 tsp. crushed garlic
  • Cucumber shavings, for garnish

Method

  • Cook pasta in boiling water according to package instructions or until firm to the bite.
  • Rinse with cold water.
  • Drain and place in a serving bowl.
  • Blanch green beans in boilng water approximately 2 minutes.
  • They should still be crisp.
  • Drain, rinse with cold water and add to pasta.
  • Add tomatoes, cucumbers, sweet peppers, onions, tuna, olives, dill and anchovies.
  • Make the dressing: In a small bowl, combine oil, lemon juice, vinegar, water and garlic.
  • Pour over pasta and toss.
  • Garnish with cucumber shavings.
