Ingredients

  • 1 lb. chicken cutlets
  • 1 (20 oz.) bag frozen broccoli cuts
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise
  • 1 tsp. lemon juice
  • 1/2 tsp. curry powder
  • 2 Tbsp. vegetable oil
  • 1/2 c. bread crumbs
  • butter

Method

  • Cut chicken cutlets into cubes; saute until browned in oil. Grease a 9 x 13-inch baking pan.
  • Spread broccoli in bottom of pan.
  • Spread chicken over broccoli.
  • Combine cream of chicken soup, mayonnaise, lemon juice and curry powder; pour over chicken and broccoli.
  • Sprinkle bread crumbs on top; dot with butter. Bake at 350° for 1/2 hour, uncovered.
