- 1 lb. chicken cutlets
- 1 (20 oz.) bag frozen broccoli cuts
- 2 cans cream of chicken soup
- 1 c. mayonnaise
- 1 tsp. lemon juice
- 1/2 tsp. curry powder
- 2 Tbsp. vegetable oil
- 1/2 c. bread crumbs
- butter
Method
- Cut chicken cutlets into cubes; saute until browned in oil. Grease a 9 x 13-inch baking pan.
- Spread broccoli in bottom of pan.
- Spread chicken over broccoli.
- Combine cream of chicken soup, mayonnaise, lemon juice and curry powder; pour over chicken and broccoli.
- Sprinkle bread crumbs on top; dot with butter. Bake at 350° for 1/2 hour, uncovered.
