Ingredients
- 1 Tbsp. oil
- 1 1/4 lb. skinned and boneless chicken breasts, cut in strips (about 2 c.)
- 1 medium red bell pepper, cut in strips
- 1 can water-packed artichoke hearts, drained and quartered
- 1/4 tsp. ground coriander or 1/8 tsp. ground nutmeg
- 1/4 tsp. salt
Method
- Heat oil over medium heat.
- Add chicken pieces to skillet and cook over medium-high heat, stirring often until chicken is white and opaque.
- Add pepper strips; cook and stir 3 minutes or until strips are crisp-tender.
- Add remaining ingredients and stir about 2 minutes until artichokes are heated through.
- Serve immediately. Makes 4 servings.
