Ingredients

  • 1.5 cups Chocolate Chips (divided)
  • 1/2 cup Cocoa Powder
  • 1.5 cups Flour
  • 5 Ripe Bananas (2 of them mushed)
  • 2 eggs
  • 1/2 cup Butter (softened)
  • 1/2 cup Brown Sugar
  • 1/4 cup White Sugar
  • 1 teaspoon White Sugar
  • 1/3 cup Irish Whisky
  • 1/2 Raisins
  • 1 teaspoon Baking Powder
  • 2 teaspoons Salt
  • 2 teaspoons Vanilla Extract

Method

  • Soak the raisins in the whiskey for at least an hour before hand.
  • Preheat the oven to 350 degrees. Butter a cast iron skillet (or can use a different cake pan).
  • Melt 1 cup of the chocolate chips (I make a double boiler on the stove).
  • Beat the sugars, salt and butter until well combined.
  • Beat in the egg, vanilla, 2 mushed bananas, and melted chocolate chips.
  • Stir in the flower, cocoa powder, whisky, baking soda, 1/4 cup of chocolate chips and 1/4 cup of raisins.
  • Pour mixture into prepared pan.
  • Cut the remaining 3 bananas in half and arrange cut side up onto the prepared batter.
  • Sprinkle the top with the remaining chocolate chips and the raisins. Sprinkle the cut bananas with the remaining 1 teaspoon of sugar.
  • Bake for about 45 minutes, check that a toothpick comes out clean.
