Ingredients
- 1 small roasting chicken
- 1 can water chestnuts, coarsely chopped
- 2 stalks celery, coarsely chopped
- 1 bunch scallions, sliced
- 1/4 c. sliced almonds
- 1 Tbsp. dried tarragon
- 1 c. mayonnaise
- salt and pepper to taste
Method
- Boil chicken for about 45 minutes or until cooked.
- Cool. Tear into bite size pieces.
- Add celery, water chestnuts, scallions and tarragon to chicken and combine.
- Add mayonnaise, salt and pepper.
- Add sliced almonds just before serving.
