Ingredients

  • 2 chickens (about 2 1/4 lb. each)
  • 1/2 c. cooking oil
  • 6 cloves garlic, minced
  • 2/3 tsp. salt
  • 1/4 tsp. pepper
  • 6 whole peppercorns
  • 2 bay leaves
  • 1/2 c. soy sauce
  • 2 c. water
  • 1/2 c. vinegar
  • 2/3 Tbsp. sugar

Method

  • Cut chicken into pieces.
  • Brown chicken in the cooking oil. Add garlic, salt, pepper, water, peppercorns, bay leaves, soy sauce, vinegar and sugar.
  • Cover and cook over low heat for 1 hour or until chicken is tender, stirring frequently.
  • Remove bay leaves and peppercorns.
  • Serve with cooked rice.
