Ingredients
- 1 c. all-purpose flour
- 1/2 c. quick oats
- 1/4 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 c. cooking oil
- 1 egg
- 3/4 c. milk
- 3/4 c. fresh blueberries
Method
- Preheat
- oven
- to
- 400°.
- Put
- paper muffin cups inside muffin pans.
- Mix
- together
- the flour, quick
- oats, sugar, baking powder and salt.
- Dig a hole in the middle.
- In another bowl, break
- the egg and mix it with milk and oil.
- Add liquid mixture to dry
- mixture and stir. Fill muffin cup half way; then put teaspoon
- of
- blueberries
- in the middle and then a teaspoon
- more of butter.
- Bake at 400° for 20 to 25 minutes. Yields 18 to 20 muffins.
