Ingredients

  • 1 c. all-purpose flour
  • 1/2 c. quick oats
  • 1/4 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. cooking oil
  • 1 egg
  • 3/4 c. milk
  • 3/4 c. fresh blueberries

Method

  • Preheat
  • oven
  • to
  • 400°.
  • Put
  • paper muffin cups inside muffin pans.
  • Mix
  • together
  • the flour, quick
  • oats, sugar, baking powder and salt.
  • Dig a hole in the middle.
  • In another bowl, break
  • the egg and mix it with milk and oil.
  • Add liquid mixture to dry
  • mixture and stir. Fill muffin cup half way; then put teaspoon
  • of
  • blueberries
  • in the middle and then a teaspoon
  • more of butter.
  • Bake at 400° for 20 to 25 minutes. Yields 18 to 20 muffins.
