Ingredients
- 1 small green pepper (1/2 c.)
- 1 can mushrooms (reserve liquid)
- 1/2 c. margarine
- 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 c. cooked chicken
- 1 1/2 c. half and half
- 1 1/2 c. chicken broth
- 1/4 c. chopped pimento
Method
- Cook and stir pepper and mushrooms in margarine over medium heat 5 minutes.
- Stir in flour, salt and pepper.
- Cook over low heat stirring constantly until bubbly.
- Remove from heat.
- Stir in half and half, broth and reserved liquid.
- Heat to boiling, stirring constantly for 1 minute.
- Stir in chicken and pimentos. Great to keep warm in crock-pot.
