Ingredients

  • 1 small green pepper (1/2 c.)
  • 1 can mushrooms (reserve liquid)
  • 1/2 c. margarine
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. cooked chicken
  • 1 1/2 c. half and half
  • 1 1/2 c. chicken broth
  • 1/4 c. chopped pimento

Method

  • Cook and stir pepper and mushrooms in margarine over medium heat 5 minutes.
  • Stir in flour, salt and pepper.
  • Cook over low heat stirring constantly until bubbly.
  • Remove from heat.
  • Stir in half and half, broth and reserved liquid.
  • Heat to boiling, stirring constantly for 1 minute.
  • Stir in chicken and pimentos. Great to keep warm in crock-pot.
