Ingredients
- 1/4 cups Extra Virgin Olive Oil
- 6 whole Boneless, Skinless Chicken Breasts
- 1 Tablespoon Salt
- 1 Tablespoon Pepper
- 1 bunch Green Onions, diced
- 1 package Cream Cheese (8 Ounce Package)
- 1 tub Feta Cheese Traditional (8 Ounce Tub)
- 3 cups Frozen Spinach, Thawed
Method
- Preheat oven to 375 F. Heat a skillet on medium with the olive oil.
- Season chicken breasts with salt and pepper.
- Add chicken into the skillet and brown for 4 minutes on each side.
- In a medium mixing bowl add green onions, cream cheese, feta and spinach.
- Stir to incorporate all ingredients.
- After chicken is browned, slice into the middle of the chicken to make little pockets where the stuffing will go.
- Fill each chicken breast with the spinach mixture and put it into a casserole dish.
- Place in the oven for 25 minutes or until chicken is done.
