Ingredients

  • 1/4 cups Extra Virgin Olive Oil
  • 6 whole Boneless, Skinless Chicken Breasts
  • 1 Tablespoon Salt
  • 1 Tablespoon Pepper
  • 1 bunch Green Onions, diced
  • 1 package Cream Cheese (8 Ounce Package)
  • 1 tub Feta Cheese Traditional (8 Ounce Tub)
  • 3 cups Frozen Spinach, Thawed

Method

  • Preheat oven to 375 F. Heat a skillet on medium with the olive oil.
  • Season chicken breasts with salt and pepper.
  • Add chicken into the skillet and brown for 4 minutes on each side.
  • In a medium mixing bowl add green onions, cream cheese, feta and spinach.
  • Stir to incorporate all ingredients.
  • After chicken is browned, slice into the middle of the chicken to make little pockets where the stuffing will go.
  • Fill each chicken breast with the spinach mixture and put it into a casserole dish.
  • Place in the oven for 25 minutes or until chicken is done.
