Ingredients

  • 2 cups Flour
  • 1 cup Brown Sugar
  • 1/2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Ground Cloves
  • 2 teaspoons Salt
  • 2 sticks Butter
  • 1/2 cups Molasses
  • 2 Eggs
  • 2 teaspoons Vanilla Extract

Method

  • Preheat your oven to 350 F.
  • Start your batter by whisking together your dry ingredients (flour through salt) in a small bowl, until the brown sugar is thoroughly incorporated
  • Put butter into a mixing bowl. Cream it with a hand mixer on medium speed for a minute and a half, then add the molasses and beat until incorporated (the molasses should only take about 30 seconds, to blend in). Then add your eggs and vanilla extract and beat until they're incorporated.
  • Slowly add your dry ingredients into the butter and molasses mixture and mix until combined.
  • Drop scoops of the batter onto a parchment paper lined cookie sheet, with a heaping 1 1/2 tablespoon sized cookie scoop. If you don't have a cookie scoop, a regular tablespoon will work. Leave about 2 inches between each cookie. Bake for 10 minutes per batch.
