Ingredients
- 1/2 c. butter or oleo
- 1 1/4 c. sugar
- 3 eggs
- 1 Tbsp. cornmeal
- 1/2 c. crushed pineapple with juice
- 1/2 c. shredded coconut
Method
- Cream butter and sugar; add eggs.
- Beat until fluffy.
- Add coconut, cornmeal and pineapple.
- Mix.
- Turn into unbaked pie shell and bake 10 minutes at 350°.
- Reduce to 325° and bake 35 minutes or until set.
