Ingredients

  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. red food coloring
  • 2 Tbsp. butter
  • 3 Tbsp. cornstarch
  • 1 c. cherry juice
  • 2 (16 oz.) cans cherries

Method

  • Mix sugar, salt, cornstarch and cherry juice in saucepan. Cook until it begins to boil.
  • Stir constantly.
  • Add drained cherries and continue cooking until the desired thickness is reached.
  • Remove from heat and add butter and red coloring.
  • Cool. Pour into pastry lined open dish and add top crust or strips of pastry.
  • Bake at 450° for ten minutes, then reduce temperature to 375° for 15 to 20 minutes.
