Ingredients
- 1 c. sugar
- 1/4 tsp. salt
- 1/4 tsp. red food coloring
- 2 Tbsp. butter
- 3 Tbsp. cornstarch
- 1 c. cherry juice
- 2 (16 oz.) cans cherries
Method
- Mix sugar, salt, cornstarch and cherry juice in saucepan. Cook until it begins to boil.
- Stir constantly.
- Add drained cherries and continue cooking until the desired thickness is reached.
- Remove from heat and add butter and red coloring.
- Cool. Pour into pastry lined open dish and add top crust or strips of pastry.
- Bake at 450° for ten minutes, then reduce temperature to 375° for 15 to 20 minutes.
