Ingredients

  • 2 None large eggs, lightly beaten
  • 1 1/4 cups sugar
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour, sifted
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 oz pecans, chopped
  • 1 x 14 oz jar of pitted cherries, plus extra to serve
  • 1 cup heavy cream, whipped, to serve

Method

  • Preheat oven to 350°F. Grease and line a 9 inch round springform cake pan.
  • Combine the eggs, sugar and vanilla in a bowl and beat until pale and creamy. Combine the flour, baking powder and salt in a separate bowl, then fold into the mixture. Stir in the pecans and cherries.
  • Pour the batter into prepared pan and level the top with a flat knife. Bake for 1 hour 20 mins, until a skewer inserted in the center comes out clean and the cake is golden. Cool on a wire rack.
  • Cut into wedges and serve with whipped cream and extra cherries.
