Ingredients
- 2 None large eggs, lightly beaten
- 1 1/4 cups sugar
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour, sifted
- 1 tsp baking powder
- 1/2 tsp salt
- 3 oz pecans, chopped
- 1 x 14 oz jar of pitted cherries, plus extra to serve
- 1 cup heavy cream, whipped, to serve
Method
- Preheat oven to 350°F. Grease and line a 9 inch round springform cake pan.
- Combine the eggs, sugar and vanilla in a bowl and beat until pale and creamy. Combine the flour, baking powder and salt in a separate bowl, then fold into the mixture. Stir in the pecans and cherries.
- Pour the batter into prepared pan and level the top with a flat knife. Bake for 1 hour 20 mins, until a skewer inserted in the center comes out clean and the cake is golden. Cool on a wire rack.
- Cut into wedges and serve with whipped cream and extra cherries.
