Ingredients

  • 1 cup italian-style ricotta cheese
  • 1 cup powdered sugar
  • 14 cup sour cream or 14 cup plain yogurt
  • 14 cup iced coffee
  • 1 12 cups graham crackers
  • 1 (21 ounce) can cherry pie filling
  • 6 cherries
  • 6 fresh mint leaves (optional) or 14 cup grated chocolate, to garnish (optional)

Method

  • In a large bowl, combine ricotta cheese, powdered sugar, sour cream and iced coffee; mix well and set aside.
  • In a blender or food processor, process graham crackers; in small batches, until finely crushed.
  • In an 8 ounced parfait glass, add 2 tablespoons ricotta cheese mixture, 2 tablespoons graham cracker crumbs, and 2 tablespoons cheery pie filling.
  • Repeat 1 more time.
  • Finish with a dollop of ricotta cheese mixture, a cherry and a mint leaf.

  • Garnish with grated chocolate before serving if desired.
  • Refrigerate any left overs.
