Ingredients

  • 4 1/3 cups cherries
  • 2 cups sugar
  • 1 cinnamon stick
  • 1 lemon zest
  • 1/2 cup port wine

Method

  • Remove the cherry pits.
  • In a saucepan, add the cherries, sugar, cinnamon stick, lemon zest, and port wine.
  • On medium heat, stir until the sugar forms a syrup. When the mixture starts to boil, lower the heat, and simmer. Cook for 1 1/2 hours until the jam reaches the setting point or 105 degrees Celsius.
  • Pour the jam in sterilized jars, cover and turn upside-down to seal.
