Ingredients

  • Filling:
  • 1 cup cherries, pitted and quartered
  • 1 cup black seedless grapes, quartered
  • 1 teaspoon Natvia
  • 1 teaspoon cornstarch
  • 1/2 teaspoon vanilla extract
  • Crust:
  • 3/4 cup wholemeal flour
  • 1/4 cup oat flour
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon coconut oil, melted
  • 1/4 cup 0% Chobani Greek yogurt
  • 1/3 cup Natvia, or sweetener of choice
  • 1/2 teaspoon vanilla extract
  • Topping:
  • 3 tablespoons rolled oats
  • 2 tablespoons almond flour
  • 2 tablespoons Natvia
  • 2 tablespoons shredded coconut
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon coconut oil, melted

Method

  • Preheat oven to 175c. Line an 8 x 8 inch baking pan with parchment paper and set aside.
  • Toss together all ingredients for filling and set aside.
  • To prepare the crust, sift together flour, baking powder and salt.
  • In a small bowl, stir together coconut oil and yogurt. Mix in Natvia and vanilla extract.
  • Pour into the flour mixture and mix until just incorporated.
  • Press dough into prepared pan and spread cherry filling on top.
  • To prepare the topping, mix together all dry ingredients. Drizzle on coconut oil and stir well. Sprinkle topping over the cherry filling.
  • Bake for 30-35 minutes, or until the crust is cooked. Set aside to cool on a wire rack for an hour before slicing into bars.
