Ingredients

  • 9 pieces Graham Crackers (1 Whole Sleeve)
  • 4 ounces, weight Butter, Melted
  • 1/3 cups Sugar
  • 8 ounces, weight Cream Cheese, Softened
  • 16 ounces, weight Powdered Sugar
  • 8 ounces, weight Cool Whip Whipped Topping, Thawed
  • 2 cans Cherry Pie Filling, 21 Oz. Each

Method

  • Put graham crackers into large Ziploc bag and crush until reduced to fine crumbs. (Or pulse in a food processor.) Add melted butter and sugar; stir to combine. Press into the bottom of a 9x13 pan. (I like a thicker crust so I usually double the crust.)
  • Put cream cheese into bowl and slowly beat in powdered sugar until mixed and fluffy. Fold Cool Whip in by hand. Spread on top of graham cracker crust.
  • Spoon pie filling on top of cream cheese mixture. Refrigerate for several hours before serving.
