Ingredients

  • 2 cups milk
  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 3 cups flour
  • 14 cup sugar
  • 1 cup frozen dark sweet cherries, thawed, chopped
  • confectioners' sugar, for topping

Method

  • In a large mixing bowl, combine milk and cream cheese; blend well.
  • Add melted butter, vanilla and beaten egg; blend well.
  • Add flour and sugar; mix well.
  • Fold in chopped cherries.
  • Pour about 1/4 cup of batter on a hot, greased griddle or frying pan.
  • Flip when bubbles form around edges.
  • Fry the other side until lightly browned.
  • Sprinkle with confectioners' sugar.
