Ingredients

  • approximately 3 lb. ground beef
  • 1 (28 oz.) and 1 (16 oz.) can chopped or diced tomatoes
  • 2 cans cream of mushroom soup (undiluted)
  • 2 c. Minute rice (more or less, your preference)
  • salt and pepper to taste
  • instant minced onions (1 or 2 Tbsp., according to taste)
  • thyme
  • 2 tsp. oregano (more or less according to taste)
  • sliced stuffed green olives (optional)
  • American cheese slices, cut in strips

Method

  • Brown ground beef in butter or margarine. Add tomatoes, rice and mushroom soup. Simmer together until rice is fully cooked. Mix in onion, oregano and thyme. While still hot, pour into casserole. Form lattice work pattern with cheese strips on top of casserole and place slice or 2 stuffed olives in each square. Place casserole under broiler just until cheese starts to melt.
