Ingredients

  • 2 Tbsp. safflower oil or butter
  • 1/4 c. all-purpose flour
  • 1 c. milk
  • 1 1/2 c. salt-free chicken broth
  • 1/2 lb. Cheddar cheese, grated
  • 3 c. cooked bow tie noodles
  • 1 (12 1/2 oz.) can tuna in water, drained
  • grated zest of 1 lemon
  • 2 c. lightly cooked broccoli flowerets
  • 1 c. cooked peas
  • 1 carrot, peeled and minced or grated
  • bread crumbs (for the top)
  • chopped parsley (for the top)

Method

  • Preheat oven to 325°.
  • Heat the oil or butter in a medium saucepan.
  • Add the flour to the pan; stir until well blended.
  • Add the milk and chicken broth, whisking constantly to blend. Continue whisking as the sauce thickens and comes to a boil.
