Ingredients

  • 2 c. potato flakes
  • 2 Tbsp. dried onion flakes
  • 2 c. water
  • 3/4 c. milk
  • 3 Tbsp. margarine
  • 1 egg
  • 8 oz. cottage cheese
  • 1 c. sharp Cheddar, shredded
  • grated Parmesan cheese
  • parsley (for garnish)

Method

  • Fix potato flakes according to package directions adding onion flakes to water.
  • Set aside to cool.
  • Add egg, cottage cheese and grated Cheddar, mixing well.
  • Put in well buttered casserole, top with Parmesan and garnish with chopped parsley.
  • Bake in 350° oven 30 to 40 minutes until set and lightly browned.
  • Serves 8.
