Ingredients
- 2 c. potato flakes
- 2 Tbsp. dried onion flakes
- 2 c. water
- 3/4 c. milk
- 3 Tbsp. margarine
- 1 egg
- 8 oz. cottage cheese
- 1 c. sharp Cheddar, shredded
- grated Parmesan cheese
- parsley (for garnish)
Method
- Fix potato flakes according to package directions adding onion flakes to water.
- Set aside to cool.
- Add egg, cottage cheese and grated Cheddar, mixing well.
- Put in well buttered casserole, top with Parmesan and garnish with chopped parsley.
- Bake in 350° oven 30 to 40 minutes until set and lightly browned.
- Serves 8.
