Ingredients

  • 6 large potatoes, peeled and cubed
  • 4 c. water
  • 1 1/2 Tbsp. salt
  • 1/4 to 1/2 tsp. pepper
  • 3 Tbsp. minced onion (1 1/2 Tbsp. dried minced)
  • 2 Tbsp. margarine
  • 2 Tbsp. flour
  • 4 c. milk
  • 4 c. grated American cheese

Method

  • Boil first 5 ingredients in a very large pan until potatoes are done but still firm.
  • In a second large pan, melt margarine; stir in flour until smooth.
  • Gradually stir in milk and cook over low heat until hot.
  • Stir in the cheese.
  • When it is melted, pour the milk mixture into the pan of potatoes and water.
  • Stir.
  • Makes about 1 gallon.
  • Great reheated, too.
