Ingredients

  • 5 (8 oz.) pkg. cream cheese, softened
  • 3 Tbsp. vanilla
  • 2 egg yolks
  • 3 Tbsp. flour
  • 1 3/4 c. sugar
  • 3 Tbsp. lemon juice
  • 5 eggs
  • graham cracker crust

Method

  • In large bowl, cream the cheese, one package at a time. Gradually add flour and blend well.
  • Add sugar a little at a time and blend until smooth.
  • Beat in lemon juice and vanilla.
  • Beat in eggs and egg yolks one at a time until fluffy.
  • Pour into a spring-form pan in which the bottom has been covered with graham cracker crust.
  • Bake at 500° for 12 minutes.
  • Reduce heat to 200° and continue baking for 40 to 50 minutes.
  • When done, run knife around outside of pan before removing.
  • Pie is done when top begins to crack and turn golden brown.
  • Toothpick should come out clean.
